today we had the chance to enjoy a delicious Pizza from the local- favorite spot Napoli On The Bay in Naples and we interviewed its owner Tony to know more about the history of the restaurant.  

Tell us about yourself and Napoli on the Bay:
We bought Napoli on the Bay in 1992, we moved down from New Jersey and have opened more places. This was the original location. When we opened this store about 10 years later I opened another one (East 41 by Lely)while we were building the Napoli on the Bay by 21 Spices and then he purchased the one on Marco and then Pine Ridge and Livingston. My uncle lived here (Marco) and we just decided to move down here.

What can you tell us about your menu?: Very simple, everything is homemade, simple ingredients, which makes it tasty. For example some people add and do all these crazy flavours, I think just let the pepperoni and other toppings do the work! We’ve had the same recipe for 78 years, since my uncle started in New Jersey. We just kept it how it was and it works.

What is your favourite thing on the menu: Stromboli, it’s like a bread, pasta and pizza are great too. Everyone knows us for pizza. The cheese we use is really good, it’s a grande cheese that is made in Wisconsin, Bourset meat we use here too, that brand is very good. All these things make a good product

Walk us through a typical day at Napoli on the Bay: Every morning we make the dough for the pizzas, we make the sauce, we grate the cheese, we get ready for lunch, we do about 30-40 pizzas which we sell by slice, all different kinds. After lunch we get ready for dinner and there are a. Lot of deliveries and pick ups in the evenings after work, they come for our special a lot too, large pizza for $10.99

What time do you get here in the morning?: Probably around 8AM. Some food trucks come in and we have to get everything organised, prepped and cleaned.

During these times how have you adjusted?: It’s definitely a challenge because the dining room has been completely empty for the last two months, no one sits inside, everyone is grab and go, but at the same time we also increased our pickup and delivery business, so we also have uber, door dash, grubhub that also bring us in quite a bit of business. People being extra careful now, if they just stay in their ar and get their food, but it’s going to be awhile before we can get people to get used to coming in and grabbing their food and either eating here or taking it to go.

We also have our own delivery and for the platforms we use, we use our own delivery too. We deliver from all the locations.
